These Yukon Gold Mashed Potatoes are so fluffy, rich, buttery and creamy. I always get tons positive feedback from our guest when I make this simple yet delicious side dish.

Ingredients
6 Yukon gold potatoes
½ cup of heavy whipping cream
1 tablespoon of finely diced onion
2 tablespoons of butter
½ teaspoon of salt
How to make Yukon Gold Mashed Potatoes:
1. Peel and cut potatoes in half, then into about ½ inch slices. Rinse and drain them, then add enough water to completely cover the potatoes. Bring them to boil on high heat and add ½ teaspoon of salt. Turn the heat down to medium low and let them simmer for about 15-20 minutes until fully cooked.
2. Drain the potatoes and set aside. In a frying pan melt butter on medium heat and add finely diced onions. Saute the onions for a couple of minutes, then add heavy whipping cream. Let it simmer for a few seconds then pour it in to the pot with your cooked potatoes. Mash your potatoes well and they are ready to serve. If potatoes are still too thick add a little more heavy whipping cream to reach desired consistency.
