This Mexican Style Chicken Breast Recipe is so delicious! It’s healthy, low calorie, and low carb. This was my first time making it, both my husband and I really loved the flavor! With your first bite the juices just ooze out. Tender, juicy, very mildly spicy, and so flavorful! Definitely going to make this again!
Ingredients
3 lb of chicken breast
7 oz can of salsa verde
1 ½ cup of Monterey Jack cheese (grated)
4 fresh tomatoes (diced)
¼ cup onion (finely chopped)
3 garlic cloves (minced)
1 ½ tablespoon of freshly chopped cilantro (optional)
1 ½ teaspoon of seasoning salt
½ teaspoon of ground coriander
1 tablespoon of olive oil
How to make Mexican Style Chicken Breast:
1. Preheat the oven to 375 degrees fahrenheit.
2. Rinse the chicken breast, pat it dry and cut into about 2×4 inch pieces. Place it in a medium size bowl then add salsa verde, finely chopped onion, minced garlic, seasoning salt, ground coriander and olive oil. Mix well and refrigerate for about 30 minutes to let it marinate. You can also make this without marinating it, or even marinate it over night for maximum flavor.
3. Place the chicken in a large oven safe baking dish then top it with diced fresh tomatoes and cilantro. (Not everyone likes the taste of cilantro so that’s optional) Sprinkle the cheese on top and bake uncovered at 375 degrees fahrenheit for 35-45 minutes.
4. Remove the dish from the oven and it’s ready to serve! Enjoy!
