Low Carb Lazy Cabbage Rolls Recipe

Cabbage rolls are a one of the most popular dishes in Eastern Europe, I grew up eating them. This Low Carb Lazy Cabbage Rolls Recipe is a lighter take on my mom’s. My mom makes the most delicious cabbage rolls, It’s one of those dishes I can eat for a whole week straight and never get sick of. They are time consuming and take hours to bake in the oven. She then came up with a quicker version where you don’t have to roll them, just form little ground meat loafs with rice and braised cabbage then cover them with more braised cabbage. They are quick and easy to make and are so delicious! I played around with her recipe and came up with my own lighter, lower carb, and lower calorie version. I used lean ground beef and replaced white rice with cauliflower rice. You can enjoy all the delicious cabbage rolls flavors guilt free. So juicy and tender and packed with flavor! 


Ingredients

2 lb lean ground beef 

3 cups cauliflower rice

2 tablespoons olive oil

6 cups green cabbage (shredded or chopped)

1 large carrot (grated)

2 cups beef broth

8 oz can tomato sauce

½ cup onion (finely chopped and divided)

3 garlic cloves (minced)

1 cup low fat shredded cheese 

3 tablespoons parsley (chopped)

4 teaspoons seasoning salt (divided)

1 teaspoon ground coriander

3 eggs

3 bay leaf


1. Preheat the oven to 375 F.

2. Place a large non stick skillet on high heat and add olive oil, shredded cabbage, grated carrot, and ¼ cup of finely chopped onion.


3. Sear on high heat stirring until you get a little color, then add ½ cup of beef broth, 1 teaspoon of seasoning salt, and 3 bay leaf. Let it simmer for a minute or so then turn the heat down to medium-low. Braise the cabbage until it’s fairly soft then remove from heat.


4. In a large bowl combine, ground beef, cauliflower rice, shredded cheese, eggs, minced garlic, ground coriander, parsley, ¼ cup of finely chopped onion, 3 teaspoons of seasoning salt and ¾ cup of braised cabbage. Mix well. 


5. Form little meat loafs and place them in an oven safe baking dish. (No need to grease it) 


6. Place the leftover braise cabbage on high heat and add 1 ½ cup of beef broth and 8 oz can of tomato sauce. Let it simmer on medium heat for about 5 minutes and remove from heat.


7. Using a large spoon place braised cabbage on each one of the meat loafs then pour all of the liquid from the pan into the baking dish. Cover with aluminum foil and bake in a 375 F preheated oven for 45 minutes.


8. Remove them from the oven, serve and ENJOY!

These Lazy Cabbage Rolls are so flavorful! I served them drizzled with a tiny bit of sour cream. Quick, easy, healthy and delicious!
