Spring is here, this means it’s time to dust off our grills and fire them up! What’s better than grilled dinner on a warm spring/summer night? This Grilled Honey Chipotle Barbecue Chicken Breast is so delicious! Smoky, sweet, spicy, tender, and juicy!
Ingredients
2 lb of chicken breast
Marinade
¾ cup of Sweet Baby Ray’s honey chipotle barbecue sauce
½ cup of original Sweet Baby Ray’s barbecue sauce
¾ cup of mayo
¼ cup of white wine vinegar
1 tablespoon of liquid smoke
½ cup on finely chopped onions
2 garlic cloves minced, finely grated or pressed
1 ½ tablespoon of dry chicken bouillon (you can also crush bouillon cubes and measure out 1½ teaspoon, or use seasoning salt)
¼ teaspoon of ground black pepper
½ teaspoon of ground coriander
Glaze
½ cup of Sweet Baby Ray’s honey chipotle barbecue sauce
2 tablespoons of original Sweet Baby Ray’s barbecue sause
½ cup of chicken bouillon or broth. (I used the dry bouillon and diluted it according to instructions on the container)
1 garlic clove minced, pressed or finely grated
¼ teaspoon of coriander
1. Preheat your grill to 450 degrees on a pellet grill or medium/high on gas. I used a pellet grill.
Making the marinade:
2. In a medium size bowl whisk together all the wet ingredients. Add finely chopped onion, minced garlic, and all the dry ingredients, then whisk until mixed well. Rinse and pat the chicken breast dry. Cut it in to about 2×3 or 2×4 inch pieces, then completely submerge in to your marinade. If the chicken breast is small you can just cut it in half. Mix well and refrigerate for at least 30 minutes to let it marinate. For best flavor marinate it over night.
Making the glaze:
3. Heat up your chicken bouillon in a microwave for about 1 minute and 30 seconds. Add the remaining glaze ingredients and mix well.
Grilling:
4. Place your chicken on the grill and spoon out a little bit of glaze on each piece of chicken. After about 7-10 minutes flip your chicken and glaze the other side. Keep an eye on it to make sure it doesn’t burn. Flip it a couple more times after about 5 minutes on each side, glazing it each time. Grill the chicken breast for about 25-30 minutes in total depending on how thick the pieces are. If you have a meat thermometer insert it halfway in to the chicken breast, It has to read at least 165 degrees fahrenheit to be fully cooked. Remove the chicken breast from the grill and serve right away.
