This Stuffed Chicken Breast recipe is perfect if you’re looking for healthy dinner ideas. It’s extremely easy to prepare and so delicious! The chicken is so juicy and goes perfect with the creamy stuffing. The yellow roasted potatoes just melt in your mouth. I’ve been getting a lot of good feedback from everyone that tries them.
CHICKEN
4 medium size chicken breasts ( about 3 lb )
2 teaspoons seasoning salt
2 teaspoons garlic powder
1 teaspoon onion powder
½ teaspoon ground coriander
STUFFING
5 oz pack of spinach
½ cup feta cheese ( crumbled )
¼ cup sundried tomatoes
½ pack cream cheese ( 4 oz )
¼ cup diced onion
2 tablespoons olive oil
ROASTED POTATOES
8 medium size yellow potatoes
2 teaspoons seasoning salt
4 tablespoon butter
2 teaspoons garlic powder
ROASTED POTATOES
1. Preheat the oven to 375 F.
2. Rinse and cut the potatoes in half, then slice them into about half inch slices.
3. Line a baking sheet with aluminum foil and drain the water from the potatoes then mix them with seasoning salt and garlic powder.
4. Melt the butter and pour it over the potatoes and mix well, then lay them out flat on the baking sheet.
5. Place the potatoes in the oven for 10 minutes while you prepare the chicken.
CHICKEN
1. Saute spinach and diced onion with 2 tablespoons of olive oil, then melt the cream cheese. Add feta cheese and sun dried tomatoes then mix well.
2. Rinse the chicken breast and make an incision in the middle for the stuffing.
3. Combine seasoning salt, garlic powder, ground coriander, and onion powder then rub the chicken breast with the spices
4. Stuff the inside of the chicken breast with the stuffing mixture and place it in a glass baking sheet.
5. Bake it for 35 minutes. Serve and enjoy!
