This Chicken and Shiitake Mushroom Gnocchi in a Creamy Tomato Sauce Recipe is less complicated than it’s name. Quick and easy recipe that your whole family will love. Gnocchi are little flour and potato dumplings, you can find them at most stores in the pasta isle. They have such delicate taste and texture, chicken tender and juicy, shiitake mushrooms add a rich and earthy flavor while the creamy tomato sauce ties it all together perfectly. Warning: This dish will get you hooked!
2 lb chicken thighs
1 pack of gnocchi
½ lb of Shiitake mushrooms (you can use any other mushrooms for this recipe as well)
½ cup of diced onion (divided)
3 garlic cloves minced (divided)
2 ¼ teaspoons of seasoning salt (divided)
½ teaspoon of ground coriander
1 teaspoon of dry basil
3 bay leaf (divided
1 pinch of ground cayenne pepper (optional)
1 cup of heavy whipping cream
1 cup of tomato sauce
1 cup of chicken broth
5 tablespoons of oil (divided)
1 tablespoon of all purpose flour
1. Chop the shiitake mushrooms into bite sized pieces and dice the onion. Place a medium sized skillet on high heat and add 2 tablespoons of oil, shiitake mushrooms and ¼ cup of diced onion. Sear on high heat just to get a little color then turn the heat down to medium-low and add 1 bay leaf, 1 minced garlic clove, and ¼ teaspoon of seasoning salt. Saute stirring for about 5 minutes then take it off the heat and set aside.
2. Trim the fat off of the chicken thighs and cut them into bite sized pieces. Use a large skillet to heat 1 tablespoon of oil on high heat. Add chicken and sear it on high heat just to get that golden brown color.
3. Turn the heat down to medium-low and add 2 minced garlic cloves, ¼ cup of diced onion , 2 bay leaf, 2 teaspoons of seasoning salt, and ½ teaspoon of ground coriander. Saute the chicken thighs occasionally stirring for about 15 minutes until fully cooked then take it off the heat. The chicken may taste a little salty but that’s alright, once you mix it with the sauce it’ll balance it out.
4. Use a medium sized skillet to heat 2 tablespoons of vegetable oil on high heat, then add 1 tablespoon of all purpose flour. Turn the heat down to about medium-low and mix the flour with the oil well. Let it simmer for a few seconds then add heavy whipping cream. Grab a whisk and start whisking non stop. The mixture will thicken and become a paste. Add the tomato sauce while whisking until the mixture is smooth then add the chicken broth and turn the heat up to about medium so it simmers. Whisk well then add basil and let it simmer for about 5 more minutes.
5. Cook the gnocchi according to the package instructions then drain the water when they’re cooked.
6. Combine the sauce, gnocchi, and the mushrooms with chicken in a large skillet then add ground cayenne pepper. (optional) Mix well and let it all simmer for about 5 minutes.
7. Take it off the heat, serve and enjoy!
