BBQ Meatball Appetizer Recipe

Try this BBQ Meatball Appetizer Recipe for your Memorial Day gathering. These appetizers are sure to impress your friends and family! Tender and juicy meatball, rich, tangy barbecue sauce, melted cheese, so delicious, just bursting with flavor! I’ve made them for a few different occasions and each time they were a hit! They are really easy and quick to prepare and just look so beautiful! 


Ingredients

1 baguette (sliced)

2 lb ground chicken or turkey

1 ¾  cup shredded Monterey Jack cheese (divided)

¼ cup onion (finely chopped)

3 garlic cloves (minced)

1 egg

½ cup plain bread crumbs

½ cup of heavy whipping cream

¼ cup of water

2 ½ teaspoons seasoning salt

½ teaspoon ground coriander

4 tablespoons parsley (chopped and divided)

½ cup Sweet Baby Ray’s Barbecue Sauce

¼ cup ketchup


How to make BBQ Meatball Appetizers:

1. Preheat the oven to 400 F.

2. Mix breadcrumbs with ½ cup of heavy whipping cream and ¼ cup of water then microwave for 30 – 45 seconds. Stir it and refrigerate.


3. In a large bowl combine 2 lb of ground chicken or turkey, (I used chicken breast that I ground up myself) ¾ cup of shredded Monterey Jack cheese, ¼ cup of finely chopped onion, 3 minced garlic cloves, 1 egg, 2 ½ teaspoons of seasoning salt, ½ teaspoon of ground coriander, and 3 tablespoons of chopped parsley. Remove the soaked breadcrumbs from the refrigerator and add them in as well.


4. Mix all the ingredients together really well. 


5. Form 1½ – 2 inch meatballs and place them in a large oven safe baking dish. You will end up with about 20 meatballs. Bake uncovered in a preheated oven for 15 minutes.


6. Meanwhile mix together ½ cup of Sweet Baby Ray’s Barbecue Sauce and ¼ of cup ketchup.


7. Remove the meatballs from the oven and spoon out the barbecue sauce mixture on each meatball and top them off with 1 cup of Monterey Jack cheese then sprinkle 1 tablespoon of parsley. Place the meatballs in the oven for 15 more minutes.


8. Cut the baguette into 20 slices about ½ inch in thickness. Place a meatball on each slice of baguette and stick a toothpick down the middle so the appetizer doesn’t fall apart when you bite into it. 

9. Final and most important step: Serve and enjoy!

You can even make the meatballs ahead of time and freeze them, then thaw, top them with BBQ sauce and cheese and just pop them in the oven for about 15 minutes right before guests arrive. ( If you do make them ahead of time make sure to bake them the full 30 minutes without adding BBQ sauce or cheese on top.)
