Sweet Kale Salad Recipe (Costco Copycat)

I searched for this Sweet Kale Salad Recipe (Costco Copycat) and couldn’t find one that tastes just like it, so I took some ideas from a few websites and added my own as well. I absolutely love this salad and can eat it every day! My sister in-law introduced me to it, she would always bring it to family gatherings and I couldn’t get over how good it was! Now I don’t have to make a trip to Costco to enjoy this delicious salad. It’s quick, simple to throw together and so refreshing!


Ingredients

Servings: 10-12 as a side salad

4 cups of kale (chopped)

6 brussels sprouts

1 cup of green cabbage (shredded)

1 ½ cup of purple cabbage (shredded)

1 cup of cut broccoli stems

¾  cup of cranberries

¼ cup of toasted pumpkin seeds (you can also use sunflower seeds)

Dressing

5 tablespoons of poppy seed dressing

3 tablespoons of freshly squeezed lemon juice


1.  Peel the broccoli stems and cut them in to thin sticks.


2. Thinly chop the cabbage.

3. Cut brussels sprouts in half then slice them.

4. Chop the kale into bite size pieces then place all the ingredients in a large bowl. 


5. Whisk together the poppyseed dressing and freshly squeezed lemon juice then pour it over the salad and mix well. 


Serve and enjoy! Really easy to make and so flavorful!

This salad stays fresh in the refrigerator for a few days. It makes a great lunch! I also like to add a protein like this Glazed Bacon Wrapped Chicken Breast. You can find the recipe here as well.
