Cauliflower Rice Mushroom Risotto Recipe (low carb/keto friendly)

Ingredients

3 cups of cauliflower rice

10 cremini mushrooms (cut in half then sliced)

¼ cup of onions (finely chopped)

1 cup of grated parmesan cheese

¼ cup of heavy whipping cream

¾ cups of chicken or vegetable broth

2 tablespoons of olive oil

2 bay leaf

¾ teaspoon of seasoning salt (divided

¾ teaspoon of garlic powder (divided)

2 tablespoons of parsley (chopped)


How to make Cauliflower Rice Mushroom Risotto:

1. Place a large skillet on medium-high heat then add olive oil, finely chopped onion, and sliced mushrooms. Sear for a couple of minutes then stir in ¼ teaspoon of seasoning salt, ¼ teaspoon of garlic powder and 2 bay leaf. Bring the heat down to medium then add heavy cream and parmesan cheese constantly stirring.  


2. Once the cheese is melted add broth and let it simmer for a couple of minutes. Stir in the cauliflower rice, the remaining ½ teaspoon of seasoning salt, and ½ teaspoon of garlic powder.
